Italian Wedding soup with ground turkey and spinach
1 pound ground turkey
1-2 boxes vegetable broth
1 teaspoon basil
2-3 onions, chopped
2 tsp red chile powder
1 tbsp crushed red pepper
3-6 cloves garlic, minced
1 tbsp olive oil
2 cans fire roasted, chopped tomatoes, with liquid
spinach
1. Saute onions, turkey, chile powder, crushed red pepper basil, garlic, and olive oil over medium heat until turkey is cooked.
2. Add tomatoes and broth and continue cooking until it reaches your preferred serving temperature.
3. Serve over fresh spinach.
